Method:
- Wash lemons well, then get a chair and peel lemons (this takes awhile). I didn't want to find other jars to use so I put lemon rinds into the full vodka bottles. *Time to make a drink so that there is enough room is the full vodka bottles for your lemon rinds. - Put into a cabinet and shake a little every day for 2 months. (The length of time is up to you - some recipes said a week and some said 6 months) while you are waiting - get some cool jars and labels to use! - Filter out the lemon vodka using a pasta strainer into a large sauce pot. Strain out any lemon rind in pot. - It is time to make a simple syrup. Heat up water on the stove and add sugar. Mix well. You can experiment with how much sugar and water to use - try equal parts of each to start. I ended up making more simple syrup than I originally intended as I didn't think it was sweet enough limoncello with my initial simple syrup. - Mix simple syrup with lemon vodka. Taste. Decide if you need it sweeter. Better to make it less sweet at first and then make additional simple syrup as needed. - Place into jars and then label. Place one in the freezer to drink later that evening. - Enjoy and Share! *Since you are using the rinds it is important to use organic lemons for this recipe
