1 yellow onion 1 red pepper a few slices of bacon Chicken Stock Butternut Squash goat cheese for topping spices, salt, pepper Method: Slice up onion and red pepper cut squash into 1 inch cubes (save the seeds and bake @ 350 for 10 minutes for a snack with spices of your choice) Bake squash, onion, pepper, and bacon @ 350 until soft Put ingredients into saucepot, add chicken stock, and simmer emulsify with a hand held blender Add spices, salt, and pepper Ladle into bowls and garnish with goat cheese Enjoy!
